this pizza is excellent. the crust is the best i’ve ever made. chewy and crispy. minor changes are:
* 00 flour
* molasses instead of honey
* dough spends 48 hours in fridge
* half the buratta and let drain for a few hours. the kind i buy is very wet.
* once assembled i pop it back in the broiler for a minute or two to warm the tomatoes and buratta
