I used what I had on hand so I used a 30 oz can of pinto beans instead of black beans. I didn’t have corn so I left it out and I used chicken stock and jasmine rice. I also didn’t have any cilantro but topped with Mexican cheese and fresh avocados. Also I used chicken breast not thighs. Delicious!
