This was a hit! I made it with frozen boneless skinless chicken thighs and just increased the cook time to 23 mins. It worked perfectly!
Others have commented that it needed more broth - I'm wondering if that was because they drained their beans and corn. I usually do, but I didn't since this recipe didn't say to... and it had plenty of liquid.
I made a few substitutions to make it with with what I had on hand. I subbed chili beans for pinto beans and that worked well. I used diced tomatoes instead of tomato sauce. I'll probably use both of those again next time.
It could use a little more depth of flavor, so next time I'll add a little smoked paprika.
