Wowee. These were incredible. I threw all the ingredients in my bread machine in the dough setting and then let it do its thing. The 1/4 cup alternate flour, I had whole wheat on hand so that’s what went in there. I used buttermilk powder instead of powdered milk and instant potato flakes instead of potato flour. Again, it’s what I had on hand. When it beeped at me, I formed the dough into buns, and tossed a towel over them for an extra 20 minute proof (my bread machine always under-proofs my sourdough starter.)
This seriously rocked. The texture was better than my favorite potato bread recipe, which shocked me. This is definitely not a weeknight recipe. A lot of it was hands off (thank you bread machine) but I still needed to be there for some critical moments.
