Delicious! This is a lunchtime meal for my daughter and me, since the fellas don't like broccoli.
It's a delicious soup, definitely way better than Paneras!
I made this pretty much as written except: I used 1 whole small onion; smoked paprika (good flavour, but regular paprika would be just as good); half milk/cream since I have no half and half, and I added some extra broth since it was the last of the carton.
Notes: I grated two small carrots, which worked perfectly - I'm not a fan of cooked carrot except I enjoy the flavour in soup.
I highly recommend preparing and pre-measuring everything beforehand, the soup cooks pretty quickly when it's time to add most ingredients - you can grate the cheese and measure the milks while cooking the veggies however.
I also recommend chopping the onion very small because otherwise it won't soften a huge amount due to the short cook time.
Unless you double, there's no need for a huge stockpot- this makes a fairly small amount.
