I don't understand how the chicken is so tender every time even though I'm just shlopping those babies onto a baking sheet. Such a simple & delish recipe. I always serve with chickpea spaghetti and Mezzetta marinara never fails me.

Spray a foiled baking pan with baking spray. Adjust oven rack to second-to-top space. Set at 400β°.
Cut π in half and pound to even thickness. Pat dry with paper towels, then season with π§ & P.
Shallow dish #1:
1 c. Panko breadcrumbs, Β½ c. grated Parmesan π§, 1 tsp oregano, Β½ tsp π§ powder, 1 tsp kosher salt, Β½ tsp pepper.
Shallow dish #2:
one whisked π₯
Dip the π breasts in π₯ and then the breadcrumb mixture. Gently press to help it stick to the chicken, then put on baking sheet.
Bake 15 mins. Flip chicken, preheat broiler, put ΒΌ c. Marinara sauce on each, and top with mozzarella π§ (recipe calls for 1 Β½ cups π§ total).
Return to oven and broil for 2-4 mins, until π§ is melted & bubbly and the edges of the chicken are browning.
