Such a delicious way to eat potatoes when you can't use an oven. I made a half batch as listed here, but still used a whole stock cube because I didn't have any fresh herbs and didn't want them to be bland. Also added a dash of Worcester sauce to the stock; delish.
One thing I would say is that this isn't a super quick shortcut for fondant potatoes. If you want those beautiful browned slices, you need to fry each slice on each side. I only used about 500g potatoes, but still had to fry in two batches because I was limited by pan space. Its still absolutely worth making this recipe, just a note to my future self that this one takes a wee bit of hand on time at the start.
