had to make some replacements. made with canned coconut milk, sushi vinegar, baking powder (triple), olive oil, brown palm sugar and confectioners sugar. i used a bit less sugar as usual. left out the icing.
surprisingly good. i baked it in a baking pan. after 15 mins it was still nearly raw so i left it. i think i just passed the perfect moisture point and overcooked it, it is quite grainy and falls apart, though its not dry. next time id bake it first 20 mins and see how it goes.
