Easy one dish meal, however, I would make a few adjustments.
1. I would cook the veggies longer. I left mine in close to 55 min and they still could of used more time. Maybe I cut them too big, but any smaller it would have been diced.
2. I would cut mu onion in chunks and not thinly slice.
3. The garlic needs more time, or more oil or needs to be wrapped in foil to get that true roasted flavour
The sauce was excellent, but easily could be doubled as I found there wasn't enough.
