i tried this recipe twice: once using coconut yogurt to sub for applesauce and once using applesauce. the yogurt batter came out a bit tacky and the final result was thicker / chewier. i didn't notice too much of a difference using applesauce besides the final result being slightly sweeter and slightly less dense. the recipe is fine if you're craving a blueberry muffin — just don't expect it to come out the same as / tasting how the original photo looks. (on the brighter side, this recipes requires no eggs, butter, or dairy milk.)
