the cake turned out amazing - fluffy, spicy & moist; will definitely make again.
Notes;
* Veganised by using vegan butter, 120g applesauce instead of the eggs (added ginger while the apples were cooking and then a tablespoon of chia seeds for good measure) and soy milk + tsp lemon juice for buttermilk.
* The batter was very fluffy but less liquid than i expected which I'm guessing is fine so don't worry like I did.
* At 50 mins the cake still stuck to the toothpick and seemed not at all set but at 55 looked fine so took it out of the oven (wanted to err on the side of more moist) and it was deff. the right call as it ended up being both set and moist
