I have made this a couple of times. The 1st time I cooked the pork in my insta pot and shredded it.
The 2nd time I had some pre-shredded pork from a previous dish I had stored in the freezer. I made the same marinade (a reduced amount so I can add a little juice and flavor). I didn't have fresh garlic or onions so I used garlic and onion powder instead of fresh. Then I added it to a sauce pan with my pre made pork and let it simmer for about 15 min until hot.
This quick pivot still turned out really well.
