Pretty good! I subbed plain cashew yogurt and no cheese to make it vegan. Added avocado. I had mine in a bowl, and my husband and son made theirs into burritos. For some time savers, buy "fire roasted" corn if it's available (then you don't have to roast it, just combine with spices) and a store bought cilantro lime or avocado lime dressing. I'll do that next time.
