okay, this was definitely really good but i made a decent amount of changes to get it there
as always, i used wayyyy more spice than the recipe requires (both in amount and like additional spices, but at this point, i don't remember exactly what i added)
i used twice as many tomatoes, easy, and only ended up using one of the shallots (even though i cut both 😭😭)
i think i ended up tripling/quadrupling the recipe for the vinaigrette because the ratio as called for looked like wayyyy too little for the amount of salad. also subbed out cilantro for the parsley
i meal-prepped these and mixed everything in a large bowl to start; i would not do that again. if you're portioning it out, mix the veggies together and then add those to the dishes, then add the chickpeas on top. it doesn't matter if the beans fall to the bottom in the container (you can always shake it), but it was hard to ensure an equal amount of different ingredients in each container the way i did it
