I doubled the recipe and added more veggies (zucchini, yellow squash, carrots, tomatoes, and used bok choy). Instead of red chilies, I used red chili flakes, cayenne, and added some coriander, white pepper, and chicken bullion. I also topped with lime and green onions. I skipped on the coconut rice. It's definitely something we'll make again!
