I will absolutely be making this again. It did take a long time to make, but that's because I also had to make the nomato sauce. However now I have a batch to freeze to use whenever needed, that's majority of the work done.
I cheated a little (and paid the price physically) because I used GF lasagne sheets as I cannot find white sweet potatoes anywhere near me (I've been trying for 5 years!).
And I did grate some cheddar on top as I can tolerate a little and I was the only person eating it who needed to be 'free from'.
It was incredible to have lasagne again after so many years. Both my daughter and partner said they couldn't tell that any of it was 'free from'.
It'll definitely be a recipe I'd remake time and time again, but will be more likely to make it if I already have a batch of nomato sauce made up, as its that which really takes the time to do, I found.
