I subbed curry paste with a couple of ingredients as I didn't have it - I replaced it with curry powder, an extra spoon of peanut butter, and a dash of paprika, cayenne pepper and ginger for some extra flavour and spice, and its delicious. I ended up adding the zucchini and the lentils after the noodles had soaked up most but not all of the sauce, and let it sit for another minute or two so they soaked up the flavour too but retained their crunch. Delicious !
