Delicious., I used 200g of dry green lentils so cooked the mixture for at least 35 minutes. This helped cook the carrots, but they were still el dente. Chop them up smaller if not using dry lentils. I had to add more water as i cooked the mix for longer. Some absorbed by the lentils and some evaporated. I cooled both the base mix and the sweet Potato before putting together. Stops them from mixing. I also added a clove of garlic and some blitzed mushrooms. I made homemade baked beans to go with it.
