Went off this recipe for dinner tonight but uhhh, I did not follow it completely. Making this note for future me when we make it again because it was good. I used the whole 5 lb russet potatoes and a small bag of shredded carrots. So... I had to up the liquid. I used 4 cubs beef broth and 4 cups tomato juice. Didn't use any tomato paste. For seasoning I used 2 packets onion soup mix salt and pepper. 1 lb beef but next time I'll do 2lbs. Small onion chopped. Garlic added at end of meat cooking . Right before serving added 1 cup heavy whipping cream. Served with shredded cheese.
