Main tip is that you need to soak the fruit overnight, so start the day before you want to eat it!
The “mixed spice” is British mixed spice. If you don’t have any, US pumpkin spice is a good substitute. I found myself out of mixed spice so used 1 tsp cinnamon, 1/2 tsp ground ginger, 1/4 tsp ground mace, 1/4 tsp ground nutmeg and it was tasty-as.
