Joanne’s recipe ; notes from her: I bake instead of fry them. I Put foil on the cookie sheet. Spray the cookie sheet and place eggplant on it. I give a quick spray to the top of the eggplant and bake for 10 minutes at 400 turn and bake second side for 10. Then follow the directions for layering.
