I let the Instant Pot slow release about 10 minutes, remove the lid, and shred with the hand mixer. The shredded chicken sits in the juices with the Pot on Keep Warm while I prep the toast and other sides and it absorbs a bit more flavor as the sauce cooks down and some of the extra liquid evaporates
