Last night we had the prepped Buddha Bowl! It was absolutely delicious and so much easier prepped- you just throw the veggies in the oven to roast, make the tahini dressing & done! ( Quinoa & tofu was already prepped as a short cut! Thank for this tip, guys!) * The key is ingredient prep!!!
Aaaand I also want to add that frozen veggies DO work! We used butternut squash, broccoli, cauliflower & edamame and put them in a mason jar frozen. And then when ready to use, drain the little bit of water- pat dry on your sheet pan, along with your sliced onions & mushrooms...add the swiggle of olive oil w/ S&P!
