I was cooking for work so I had to scale it up to 28 servings. Didn’t put in as much in some places (only 28 oz diced tomatoes, 1/2 the required vegetables) but still turned out very well. I think the lack of diced tomatoes plus juice or whatever made the liquid-solids ratio more stew-like, but I enjoy stews more than soup and no one had a complaint about it.
