To create a more balanced dish, next time I would:
- Serve with bok choy / cucumber for freshness
- Add pickled element to offset the richness (e.g. radish / carrot)
- Not bother creating the broth, and stick to just the noodles with the peanut chicken sauce
Also, it definitely takes longer than 30 minutes to cook. Lots of dishes too if you make your own chilli oil.
