Let me start by saying I've been pescatarian for years now and have just started the gluten free journey. In the vulnerable hours following my 8 mile run today i managed to make this and not chow down on something gluten laden while i waited. This bread was perfection. I could only find black flaxseeds but other than that i followed everything exactly. The loaf is quite small and didn't double like the creator said it would, but i would still make it again! Next time, i will double it and won't flatten out the loaf prior to baking so much. I would also try a teaspoon of apple cider vinegar, 1 tsp baking powder (instead of 2) and 1/2 tsp baking soda as suggested by a commenter on the blog when address the "loaf didn't rise" conundrum. I highly recommend this for anyone looking for gluten free and no/low sugar foods that are more filling.
