I’ve been on a journey to find a fluffy, moist, vegan, oil-free, refined sugar free, whole wheat, non-acidic tasting pancake. Quite a lot of boxes to check off for a pancake! But this one does it! The first time I made this recipe they were good but I knew they could be better. I changed a few things to the recipe and they came out perfect. Instead of 1 1/4 cup water I did 3/4 cup water and 1/2 cup homemade oat milk. I added an extra tbsp of apple sauce. And for baking powder, I used 1 tsp instead of 2 tsp. Highly recommend trying it this way!
