I made a plain bread with this recipe today and the dough was too watery and sticky I couldn't form it into a ball. it ended up flattening in the oven and i don't know what I did wrong.. I used bread flour with 12,2% protein.. and did many rounds of stretch and folds but it never got the round shape and the smooth texture yours did. It wasn't shinny and smooth, it was wrinkly and uneven. Please can someone help? What went wrong?

Something may be off with the measurements of the ingredients. Did you use a scale to weigh each component?
