I made a half batch to use as topping on a chicken, red quinoa and roasted vegetable bowl. I like romesco sauce and chose this recipe because I had sun dried tomatoes to use. Normally the sauce is made with roasted tomatoes. I did not rinse the oil off, adding only half of the olive oil that I needed to account for not rinsing. I used salted roasted almonds because I had them to use up. I did not halve the amount of almonds because other recipes used more. My husband doesn't like almonds by themselves but he liked this romesco a lot. He said the sauce was the best thing about the dish.
