As mentioned in the dialogue, the recipe is open to variations. I ended up buying a 5 pound fryer, and keeping to advice of covering the chicken in water, (so more water and more orzo - still drained off some of the liquid after cooking) the end result was not quite as flavorful as expected. I WILL give it another chance though with a smaller chicken and perhaps chicken broth instead of water. I loved the tarragon and leeks in this!!
