This is delicious. I did add some peppers to the apples and onions and spinach for more bulk and flavor. I made it in a cast-iron pan and I did not take the chicken out early enough to put the glaze on top, I did not want to overcook it so I put the glaze on for a shorter amount of time on a lower broil setting. I think it turned out really delicious and very light. I added some rice to it as well.
For next time, I will try making a 50% more sauce, because while it was very healthy, it would be a little tastier with more sauce or using chicken thighs for a more filling dish.
