Great recipe. I used about 700grams of cauliflower and their stalks. Would boil for less than 5 mins as you'll be cooking in oven after - if you need want it with more of a bite. Was surprised at how easy it was to make white sauce!!! I didn't even have 500ml milk. So reconstituted 250ml semi skimmed with water and oatmilk to make up the quantity. Added in some cracked black pepper whilst stirring. After adding the cheese once it was off the heat I added kimchi and salt to taste (recommend adding salt at this stage as you can't tell how much the kimchi has - and it's sweet so need to counterbalance a bit). Was yum! Got many compliments.
