Step 1
Heat a large pan over medium-high and melt 1 tablespoon of butter. Add beef and season with salt and pepper. Cook beef, stirring occasionally, until cooked through, about 10 minutes. Transfer meat to a plate.
Step 2
Return pan to medium-high heat and add remaining butter and mushrooms. Cook, tossing occasionally, until mushrooms are golden, about 7 minutes. Season with salt and pepper and add garlic. Cook until fragrant, 1 minute. Add stock/broth, cream cheese, sour cream, Worcestershire, Dijon, and paprika to pan. Bring to a simmer, stirring.
Step 3
Return beef to pan and stir to combine. Serve over cauliflower rice with garnish with parsley.
