Our favorite bagel spot that made this type of muffin closed so I needed to find a recipe that hit the spot. Although not identical, it was pretty dang good. I did make some modifications based on some reviews. First, I used 1/2 cup of white flour and the rest was almond flour. Then I subbed out the brown sugar and used coconut sugar. I decreased the white sugar to 1/4 cup. I used avocado oil instead of vegetable oil (I ran out of coconut oil). Next time, I want to taste chunks of pineapple so I will try it with pineapple chunks instead. I felt good with the healthier substitutions I made. I did have to bake it for 25 min - when the toothpick came out dry- so keep an eye on it.
