Delicious, a keeper!!! Creamy, slightly spicy, & very filling!
**Substitutions: I used 'Trumpet' shaped pasta instead in Penne. Added red & yellow bell peppers & 3 cloves of garlic after adding in the onion. I also doubled the recipe, so it would last 3-4 days for 2 people.
Next time I will use a different pasta, one that's round & short since I don't like the shape of penne, strange I know.
Also, I had to add more seasoning to the liquid/broth, so next time I will add half to 1 tablespoon of Cajun seasoning to the liquids so that it will absorb into the pasta. The seasoning from the chicken alone wasn't enough for my Caribbean tongue. Other than that the recipe came out delicious. It literally got better tasting with each fork full!
* The sauce also thickens as it cools down. I was concerned that it was still so liquidy after the 10 minute mark, but I put the pan on a cool burner with the lid tilted open & let it sit for probably 30mins before I started eating. By then the sauce had thickened up & the pasta became thick & juicy from absorbing some of the sauce.
This is the type of meal that will taste much better the next day as a left over. Once the temperature cools & the flavors have had time to blend & settle it becomes a flavor 💣.
