Very authentic prep made simple with the sheet pan approach. I did sub Arabian 7 spice power for the ground cloves which adds nutmeg, ginger, cinnamon, black pepper, allspice, and fenugreek to cloves which can sometimes be over powering its own. Also made only 6 thighs (about 2lbs) which was plenty for 2 and made leftovers. Final thing, if you marinate overnight (and you should) wait to add the lemon juice until a few hours before you cook so you don’t run the risk of the citrus cooking the chicken and making it mealy.
