This has potential if you're a cauliflower fan, but it wasn't for us.
That being said, I do have some tips:
Chop the cauliflower to the same size as the potatoes. Remove a cup if you want to maintain texture, but blend the rest. Use fresh thyme, or add less (it was a little overpowering).
Serve with focaccia with garlic butter, or other flavourful breads as the soup is lightly flavoured.
