Blueberry Preserves
10oz fresh or frozen blueberries
1/4C. sugar
1Tbsp. lemon juice
3/4tsp. cinnamon
Pinch of salt
1 1/2 Tbsp. cornstarch
In a small pot mix all the ingredients together & cook over low heat(stirring constantly) until the berries start to breakdown & release their juices. Turn the stove to medium heat & continue cooking until the mixture thickens & becomes jelly-like. Once it has thickened transfer the preserves to a bowl & let cool to room temperature before using.
Lemon Glaze
1C. powered sugar
1/2Tbsp. fresh lemon zest
1-3Tbsp. lemon juice
•Add the powered sugar, lemon zest & 1Tbsp. of lemon juice to a bowl. Stir & add more lemon juice 1Tbsp. at a time to the glaze until it is thick but pourable. Pour over the warm rolls & serve.
