This came out fairly well, but some notes for next time:
Having a 6 in round pan would have been better for this, but the square (loaf pan cut in half) wasn’t bad.
The merengue was very fragile, and I needed a lot of cream for the whipped cream topping. I would probably decrease the sugar of the whipped cream be do slightly less. I didn’t get the strawberry stacking in this middle correct, and I should definitely make smaller pieces next time.
It makes a small cake and was gone fast!
