Tuesday's supper was a unique experience! It was also a learning curve for me and the results were wonderful!
We had some medium tofu kicking around & I chopped it up, threw it into the shawarma marinade I prepped on Sunday.
I mentioned earlier that I didn't have nutmeg so I actually threw in some Pumpkin Spice. What have I got to lose?!
In hindsight, I realized too late that I was supposed to press the tofu under a book or something for 30 mins but I only patted it dry with paper towel. I opened my mason jar of marinade and threw in the tofu to mingle for a bit.
I boiled the water for my short cut of 10 min 5 grains while I fried up the tofu. I chopped cucs, tomato & onion.
Plated everything with dabs of Tzatziki- M & I were blown away. Absolutely delicious ๐ I can only imagine what this recipe is like with chicken! And I love the app has a place to make your own notes for next time! Like: " Remember to press your tofu for crispyness." ๐๐๐
