Made this for dinner along with gyros, and it was phenomenal! Making a second batch tonight, just a day later. I used Basmati rice and increased the broth to 8 cups (because I didn't want to put the remaining 2 cups in the fridge and forget about them, then toss them next month when I find them). This will be on regular rotation in our house, with some in the freezer for night we have upset tummies. It's easy to digest and lifts the spirits with its cheerful lemon and heart chicken flavors.
