I meal prepped this (surprise surprise) and it was dynamite! I made a lot of small changes but the core of the recipe is the same.
I completely forgot the kale (๐ญ) but when I make this again, I'll probably put it into the orzo so it wilts a bit.
No need to dirty a food processor - I just mashed the chickpeas a bit and minced the tempeh and mushrooms.
I made extra of the dressing (it's DELICIOUS), but made mine way too spicy so I had to dilute with some almond milk - if you're not a spice pro, maybe use one pepper instead of two! I also put the dressing into a blender for a smooth consistency.
I also seasoned the orzo with a lil oil (to avoid sticking/gumminess), onion powder, garlic salt and chives.
