These have quickly become my favorite everyday pancakes/waffles. They're perfectly fluffy, a little chewy, and keep my guts moving happily with all the fiber. They reheat well in the toaster. They're great traditionally with fruit and syrup and also make a great base for PBJ when your oven is busted and you can't bake bread. Adding that I've tried replacing the eggs with banana and flax, which was ok but the waffles were a bit limp. Then tried Bob's Red Mill egg replacer with decent results. I always use cashew yogurt, so with those subs these can be vegan as well as gluten free.
