I didn't really follow the recipe but instead used it as a frame to go off of. Instead of frozen veg I did yellow and red pepper one of each diced. Started with them, a little olive oil, and minced garlic in a pan. While this was happening i started boiling my water for the pasta. After frying for a few minutes I added the diced sausage and seasoned with Cajun seasoning and some oregano. After the sausages were a little crispy I added 1 cup of chicken broth, a jar of marinara, and 8oz of shredded mozzarella. Brought this to a simmer to help the cheese melt and added a bit of pasta water. Once the cheese was melted and the pasta was soft I made up my meal prep containers for the fridge getting 4 total and then was able to have a hefty portion left over for me and my wife to eat immediately. My 1 and a half year old daughter even had a decent portion of the sauce which was surprising because she is a picky eater.
