Love this recipe! When I make this I actually just put a good amount of cornstarch in a bowl and roll each piece of tofu around in it so that it has a good coating. I probably use a decent amount more cornstarch than stated in the recipe, although I'm not measuring. (Afterward, I gently toss the cornstarch-coated tofu with the soy sauce and oil in a bowl). It takes a little longer this way, but I think it helps the tofu to crisp up nicely in the pan. Ketchup works great as an alternative to tomato paste. I recommend garnishing with lime, sesame seeds, and green onions!
