Really quite impressed with the texture of “bread” and the ease of this recipe. Again as with all these keto “breads” the calorie content is frightening. It’s about 150 calories a slice this. Chat GPT says try substituting some of the oil with Greek yoghurt to bring the calories down so might try that next time.
The “bread” was lovely with butter and jam and while it took some time, I was able to toast it under the grill to make tuna toasties. This is ridiculously easy to make and I didn’t need a stand mixer I used a hand held cake whisk and it did the trick.
One thing though - I put the tiniest pinch of sweetener in. It does not need the sweetener at all. I’ve no idea why they put
that in the recipe just add the cinnamon and forget the sweetener unless you want a very sweet bread. It does have that ever so slightly eggy flavour to it but honestly this is a ruddy good substitute for bread. It doesn’t make 14 slices unless you are making mega small slices. Maybe 10.
