I have made variations of this recipe with varying success (in terms of fluffiness and texture), and regardless of whether it thickens or if its deflated it has been delicious.
I love it sprinkled with sea salt on top and frozen rasperries in the middle. Have also substitued vanilla extract with orange extract and it tastes like a chocolate orange..! This recipe blew my mind and cannot believe its vegan.
Saving this recipe with the tips as i have had every recipe either flop (go liquidey), or had the chocolate go grainey. Will update on next successful mousse.
TIPS:
- Immersion blender works in a pinch, but you may need two (turns out they dont like blending for 15 mins)
- Chilled aquafaba whips faster
- Requires several hours to set - recommend make day before if serving for party.
