Delicious! Not so much of a sweet potato taste. More so like a cinnamon ice cream with a hint of pumpkin flavor. Will be a new go to easy ice cream recipe. About two tablespoons of coconut milk was also Blended in. This recipe makes about a pint of ice cream total. I'm pretty sure you could mix the sweet potato and banana and freeze it all in one step. I'm going to try that next time.
