the best tip I've heard for making tofu actually crispy is to make sure you press it long enough! I usually press mine for about 30 minutes with a cookbook or 2 on top. then pat it dry and cut it however you like, put it in a bowl and gently toss it or stir it with a tbs or 2 of corn starch. then you can pan fry, air fry, or bake it to your preference and it should turn out nice and crispy!
