I went a little "off recipe" with this, but it turned out great!
Used frozen broccoli, frozen green beans, diced bell peppers, and diced onions for the veggies. I used 2 tbsp of olive oil on the veggies (instead of 3).
For the chicken, I used vegan butter. For the cheese/breading mixture, I used Aldi vegan mozzarella, Chao cheese slices cut into shredded cheese pieces, and a generous shake of nutritional yeast.
I included brown sugar carrots on the baking tray, and they turned out nice, too.
